Apple Wheat Pancakes

Traditional breakfast recipe takes on a new twist with apple slices, whole wheat flour, and cinnamon.
 

Ingredients

  • 1 cup whole wheat flour
  • 1 Tablespoon brown sugar
  • 2 1/2 teaspoons baking powder
  • 2 Tablespoons cinnamon
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 cup skim milk
  • 1 large apple, thinly sliced

Method

In a mixing bowl, stir together wheat flour, brown sugar, baking powder, cinnamon, and salt. Make a well in the center of the dry mixture. In another bowl, combine egg, milk, and vanilla. Add egg mixture all at once to the dry mixture. Stir until moist. Add apple slices. Stir just to mix apples into batter. Pour 1/4 cup of batter onto hot, greased griddle or heavy skillet. Cook over medium heat until golden brown, and then flip pancake to other side. Cook until golden brown.
