Bacon Egg and Cheese Muffins

Canned biscuits make this recipe a snap--just top each biscuit with scrambled eggs and bacon, then bake for 20 minutes.
 

Ingredients

  • 1 pkg canned biscuits
  • 4 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup real bacon bits or pieces
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp nutmeg
  • 1/4 tsp onion salt
  • 1/4 tsp thyme

Method

Preheat oven to 350 degrees. Spray muffin pan with butter spray. Flatten each biscuit and press into muffin pan to create a well. Whisk eggs with all spices and pour into biscuit wells. Sprinkle each with cheese and bacon. Bake at 350 degrees for 20 minutes or until brown on top.

 

Notes: These can be prepared the night before--just cover with foil and refrigerate. My kids love these, and they're so easy when you're in the morning rush.
