|1½ cups||All Purpose Flour|
|1 tsp||Baking Soda|
|1 tsp||Baking Powder|
|½ cup||Sweetened & Shredded Coconut|
|½ cup||Brown Sugar|
|1||Egg, lightly beaten|
|¼ cup||Canola Oil|
|⅓ cup||Packed Brown Sugar|
|¼ cup||Finely Chopped Toasted Macadamia|
|¼ cup||Sweetened & Shredded Coconut|
Preheat oven to 375 degrees. Lightly grease 12 muffin cups, or line with muffin papers. In a large bowl, mix together flour, baking soda, baking powder and salt. In another bowl, beat together bananas, brown sugar, egg and oil. Stir the banana mixture into the flour mixture, just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, nuts and coconut. Cut in butter until crumbly. Sprinkle topping over muffins.
Bake muffins for 20-25 minutes or until golden brown.
