Moist, with lots of banana and topped with a crumbly and delicious streusel. These tasty muffins are a great snack or breakfast on the go.

1½ cups All Purpose Flour
1 tsp Baking Soda
1 tsp Baking Powder
½ tsp Salt
4 Bananas, mashed
½ cup Sweetened & Shredded Coconut
½ cup Brown Sugar
1 Egg, lightly beaten
¼ cup Canola Oil
⅓ cup Packed Brown Sugar
¼ cup Finely Chopped Toasted Macadamia
¼ cup Sweetened & Shredded Coconut
2 Tbsp Butter



Preheat oven to 375 degrees. Lightly grease 12 muffin cups, or line with muffin papers. In a large bowl, mix together flour, baking soda, baking powder and salt. In another bowl, beat together bananas, brown sugar, egg and oil. Stir the banana mixture into the flour mixture, just until moistened. Spoon batter into prepared muffin cups.


In a small bowl, mix together brown sugar, nuts and coconut. Cut in butter until crumbly. Sprinkle topping over muffins.

Bake muffins for 20-25 minutes or until golden brown.
