Barbecue Chicken with Southern Style Sauce

Barbecued chicken is bursting with flavor when seasoned with this sweet and spicy rub and barbecue sauce.
Ingredients
- 8 chicken legs with thighs attached
- 16 tbsp butter
- 1 batch Chicken Rub, recipe follows
- 1 batch Southern Barbecue Sauce
- Fresh parsley for garnish
- Fresh lemon, sliced and twisted for garnish
- Chicken Rub:
- 5 tbsp smoked paprika
- 1/4 cup light brown sugar
- 2 tbsp kosher salt
- 1 1/2 tbsp ground cumin
- 1 tbsp ground allspice
- 1 tbsp chipotle chili powder
- Sweet Southern Barbecue Sauce:
- 3 cups water
- 3 cups ketchup
- 1 3/4 cup brown sugar
- 2 1/2 tbsp minced garlic
- 1 small lemon, sliced
- 6 tbsp Worcestershire sauce
- 1 tsp kosher salt
- 1 1/2 tsp ground cumin
- 1 1/2 tsp onion
- 1 1/2 tsp chili powder
- 3 tsp hickory Liquid Smoke

Sauce: Place ingredients in a medium pot and whisk together. Simmer on medium heat 45-60 minutes or until it has reduced by at least one third and thickens. Preheat grill on medium heat. Prepare two large sheet pans with foil and spray with nonstick spray. Wash chicken and pat dry. Place chicken on baking pans. Whisk rub ingredients together in small bowl. Lift skin and rub with butter. Push with fingers then lift skin again and place about 1-1 1/2 tsp chicken rub under skin and rub in. Rub outside skin with butter and chicken rub. Continue until all leg and thigh pieces are done. Place chicken on preheated grill at 350 degrees for 40-60 minutes covered and turn every 10-20 minutes. Apply sauce during last fifteen minutes of cooking, to both sides, with a barbecue mop or a paintbrush. Remove chicken from grill, cover in sweet barbecue sauce, and let stand five minutes. Garnish with lemon slices and fresh parsley.
Notes: Once you try this you sweet and slightly spicy rub you will never use any other recipe for barbeque. This sauce is also wonderful on beef and pork. I even use it on lima beans.
