Blueberry Cobbler Breakfast Casserole

Blueberry pie filling puts a new twist on this egg, sausage and bread breakfast casserole.
 

Ingredients

  • 1 lb bulk sausage, cooked and drained
  • 10 slices bread, torn in pieces
  • 6 eggs
  • 1 1/2 cups milk
  • 1/2 cup packed brown sugar
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 can blueberry pie filling
  • 1 cup chopped nuts

Method

Cook sausage, drain and set aside. Beat eggs, milk, brown sugar, vanilla, salt and cinnamon until well blended. Place bread in a 9 x 13 baking dish and fold in blueberry pie filling, chopped nuts and cooked sausage. Pour egg mixture over all. Cover and refrigerate overnight. Bake in a preheated 350 degree oven for 1 hour or until set and lightly browned.

 

Notes: Any type pie filling can be used in this recipe.
