Breakfast Trifle

This vegetarian friendly dish makes a great addition to any brunch spread. This trifle is layered with hash browns, eggs, cheese and tomatoes.
 

Ingredients

  • 6 cups frozen hash browns
  • 2 small onions, peeled and chopped
  • 1 1/2 cups diced tomatoes
  • 2 small bell peppers, chopped
  • 5 tablespoons olive oil
  • 7 eggs, scrambled
  • 3 cups shredded cheddar cheese
  • Salt and pepper, optional

Method

Pour olive oil in a large pan. Cook hash browns, onions and peppers until hash browns are a golden brown. In a small bowl, combine cheese and tomatoes together. In a medium trifle bowl, layer bottom with a small amount of hash brown mixture and layer a small portion of eggs on top. Spread a small portion of tomato and cheese mixture on top of eggs. Repeat layers. Salt and pepper as desired.
