Cheddar Turkey Omelette

The perfect one-dish meal; a fresh omelette with turkey, cheddar cheese, basil and cranberry sauce.
 

Ingredients

  • 2 eggs
  • 2 tbsp milk
  • Salt and pepper to taste
  • 1/4 cup cooked, cubed turkey
  • 3-4 tbsp shredded cheddar cheese
  • 1 1/2 tsp chopped fresh basil
  • 1 heaping teaspoon cranberry sauce

Method

Whisk together eggs, milk, salt and pepper; pour into a preheated, nonstick omelet pan. Cook slowly, until omelet is almost cooked and ready to fold. Just before folding omelet, add turkey, cheddar and basil to omelet. Fold over and let cook for about 30 seconds to 1 minute, or until cheese starts to melt. Remove from pan to plate, and top with a dollop of cranberry sauce.

 

Notes: This is a wonderful way to use some of that leftover turkey from Thanksgiving.
