Chipotle Turkey Posole

Chipotle chilies add a rich, smoky flavor to this low fat turkey and vegetable soup.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 tablespoon minced chipotle chilies in adobo sauce
- 1 32 oz carton low sodium chicken broth
- 2 15.5 oz cans hominy
- 2 cups frozen mixed vegetables, thawed
- 1/2 cup chopped fresh cilantro
- 1/2 cup shredded peppered Monterey Jack cheese

Method
Heat olive oil in a large skillet. Brown turkey over medium high heat. Add next four ingredients, bring to a boil, then reduce heat and simmer 10 minutes. Ladle soup into serving bowls and top each serving with cilantro and cheese.
Notes: This is a quick, easy and economical dish.
