Cold Noodles with Peanut Surprise

Healthy wheat noodles served with a spicy peanut and soy flavored sauce--a super simple side dish.
 

Ingredients

  • 1 handful Korean or Japanese style thin wheat noodles
  • 1 tsp sesame oil
  • 6 green onions, chopped fine
  • 2 pinches crushed red pepper
  • 1/2 tsp crushed garlic
  • Soy sauce to taste
  • 2 spoonfuls crunchy peanut butter

Method

Start boiling water in a pot, when boiling, add noodles and stir 3-5 minutes to cook noodles, When noodles are tender, strain in colander and rinse with cold water. Place noodles in a mixing bowl and add sesame oil. Using hands, mix oil into noodles until evenly spread. Add crushed garlic, green onions and red pepper. Mix noodles with hands until green onions and red pepper are evenly combines. Place peanut butter in a bowl and microwave 1 minute to melt. Pour over noodles and stir in, being careful as peanut butter will be hot. Add soy sauce slowly to ensure it spreads evenly.

 

Notes: The peanut butter is optional, but it gives a great nutty flavor and crunch. You can also use smooth peanut butter. Add red pepper carefully, as too much will make it too spicy to enjoy. Also add soy sauce carefully, as too much will make it salty.
