Couscous with Greens & Spicy Red Onion Relish

A red onion relish is prepared with vinegar, ground red pepper, and a little sugar, and stirred into quick-cooking couscous with chopped greens and cilantro.
 

Ingredients

  • 1 medium red onion, chopped
  • 1/2 cup red wine vinegar
  • 1/2 cup water
  • 1 tsp cayenne pepper
  • 2 Tbs sugar
  • 2 cups water
  • 2 cups chicken stock
  • 2 cups quick-cooking couscous
  • 4 cups finely chopped greens (Swiss chard or kale is preferred)
  • 1 cup cilantro leaves, chopped

Method

Combine red onion, red wine vinegar, the 1/2 cup water, cayenne pepper and sugar in small saucepan and simmer over medium-high heat 5 minutes; set aside. Meanwhile, bring remaining water & chicken stock to a boil over high heat in heavy saucepan. Add couscous, stir. Throw the greens and cilantro on top; cover and remove from heat. Let sit for 5 minutes. Stir in the onion relish, fluff with a fork and serve.

 

Notes: You may add salt, pepper and butter to taste, but I find the onion relish seasons the couscous adequately for my tastes. This is wonderful served with curried chicken, fish or shrimp.
