Cranberry Lamb Skewers

Thin slices of lamb, marinated in a spiced cranberry sauce, then sauteed to your taste.
 

Ingredients

  • 1 pound lamb top round, cut into 20 thin slices
  • 2 cans cranberries
  • 2 tablespoons brown sugar
  • 2 tablespoons chili powder
  • 1 tablespoons garlic powder
  • 1 teaspoon paprika
  • 4 tablespoons extra virgin olive oil

Method

Soak 20 8 inch skewers in water, about 30 minutes. Spear lamb on skewers leaving room to handle skewer. Combine cranberries, brown sugar, chili powder, garlic powder and paprika. Place lamb in cranberry mixture and marinate in refrigerator overnight. Remove from marinade, place olive oil in a hot pan and sear 2 minutes on each side, or until cooked to desired doneness.
