Cream De Cocoa 2

Combine Dutch process cocoa powder, a sugar syrup, and vanilla extract. Add vodka and let stand for several weeks to make this liqueur, also spelled creme de cacao.
 

Ingredients

  • 8 tsp. Dutch process cocoa powder
  • 1 fifth of vodka
  • 1 1/2 cups sugar syrup
  • 1 tsp. vanilla extract

Method

Stir together cocoa and a little of the vodka in a cup until cocoa is dissolved. Gradually stir a little more vodka into this cocoa solution. Add the rest of the vodka to this mixture; pour in the sugar syrup and vanilla. Place in a large bottle. Shake well and let steep for two weeks, shaking well several times during the steeping process. Let stand undisturbed for one month. Decant the liquid and discard the chocolate that has settled to the bottom. The liqueur should be shaken a little before using.
