Diet Fruit Slaw

A cool and crunchy slaw made with cabbage, pineapple, and apples in a light dressing.
Ingredients
- 8 oz can pineapple chunks
- 2 c. shredded cabbage
- 2/3 c chopped apple
- 1/2 c. shredded carrot
- 1/4 c. chopped green pepper
- 1 Tblsp. oil
- 1 Tblsp. honey
- 1 Tblsp. lemon juice
- 1/8 tsp. ginger

Method
Drain pineapple chunks, reserving 2 Tblsp juice. In large salad bowl, combine pineapple, cabbage, apple, carrot, and green pepper. For dressing, combine reserved pineapple juice, oil, honey, lemon juice, ginger and 1/8 tsp salt. Cover and shake. Pour over salad and chill overnight.
