Egg Crumbles

A slightly-sweet batter of flour, eggs, baking powder and milk is cooked and scrambled to break it into crumbles.
 

Ingredients

  • 3 cups flour
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1 Tbsp sugar
  • 3 eggs, beaten
  • Milk
  • Oil

Method

Combine dry ingredients. Stir in beaten eggs and enough milk to make a dough that's softer than a drop cookie dough (like a pancake-type batter). Mix well. Pour just enough oil in an omelet or frying pan to coat bottom. Pour in batter. Keep stirring and chopping to break up batter until lightly browned and done.
