Family Reunion Healthy Pasta and Vegetable Salad

This low-sugar and lower fat pasta salad uses sugar substitute and light salad dressing in the dressing.
 

Ingredients

  • 13.25 oz box Health Harvest Ronzoni
  • 2-16 oz pkgs (two different) frozen vegetable mixes
  • 2/3 cup Miracle Whip Light
  • 1/3 cup cider vinegar
  • 1/3 cup milk
  • Sugar substitute equivalent to 1/3 cup sugar (or to taste)
  • 1 teaspoon paprika
  • Salt and pepper to taste

Method

1. Bring 4 qts water to a rapid boil. Add Ronzoni. Cook 12 minutes. 2. Add 2 different (for variety) 16 oz bags of frozen vegetables. Cook an additional 2-5 minutes until done. Drain. Plunge in cold water; drain in collander. 3. Combine Miracle Whip, cider vinegar, milk, sugar substitute, paprika, salt and pepper to make dressing. 4. Pour over salad, mix thoroughly, and chill 4 hours or more.

 

Notes: Show off a bit for the family. Deliver salad to the reunion in a pretty glass bowl trimmed with parsley and cherry tomato blossoms (tomatoes cut nearly in quarters).
