Fast and Healthy Chili

This vegetarian chili uses crumbled soy protein (often found in the frozen food section of your super market) instead of meat. It also has tomatoes, tomato sauce, and chili beans in chili sauce. Select the degree of "warmth" you like by using either "hot" or mild chili powder.
 

Ingredients

  • 1 small onion, chopped
  • 1 tbsp. oil
  • 1 14 1/2 oz. can of tomatoes
  • 1 15 1/2 oz. can of beans in chili sauce
  • 1 8 oz. can tomato sauce
  • 1 bay leaf
  • 1 tsp. oregano
  • 1 tbsp. chili powder ("hot" or mild)
  • 2 cups soy burger crumbles (in frozen food dept.)

Method

In a medium saucepan, saute onion in oil until soft. Add remaining ingredients, except soy crumbles. Bring to boil, cover; reduce heat and simmer 25 minutes. Add soy crumbles; cover and simmer 5 more minutes until heated through.

 

Notes: This is really very good and low in fat. You can find the soy crumbles in resealable bags in the frozen food section.
