Fast & Healthy Chili

This vegetarian chili uses crumbled soy protein (often found in the frozen food section of your super market) to make it a meatless treat every vegetarian will enjoy. It also has tomatoes, tomato sauce, and chili beans flavored to taste with chili powder.

  • Servings: 4

Ingredients:

1 Small Onion, chopped
1 Tbsp Oil
1× 14½ oz. can Tomatoes
1× 15½ oz. can Beans In Chili Sauce
1× 8 oz. can Tomato Sauce
1 Bay Leaf
1 tsp Oregano
1 Tbsp Chili Powder, "hot" or mild
2 cups Soy Burger Crumbles, in frozen food dept.

Directions:

In a medium saucepan, saute onion in oil until soft. Add remaining ingredients, except soy crumbles. Bring to boil, cover; reduce heat and simmer 25 minutes. Add soy crumbles; cover and simmer 5 more minutes until heated through.

Helpful Tips:

This is really very good and low in fat. You can find the soy crumbles in resealable bags in the frozen food section.
