Gi-Gi's Cornmeal Porridge

Vanilla, ginger, cinnamon, and nutmeg make this warm, healthy breakfast extra comforting and delicious.
Ingredients
- 2 3/4 cups cornmeal
- 1/2 cup vanilla
- 1 tbsp ground ginger
- 1 tbsp cinnamon
- 1 tbsp ground nutmeg
- 1 can coconut milk
- 9 cups lukewarm water
- Sweetened condensed milk

Method
Place water and cornmeal in pan, using a large spoon to break up lumps. Turn stove on high and cook for 10-15 minutes, stirring constantly to avoid burning. Reduce heat to medium, add coconut milk and cook to thicken. Add other spices and turn off stove. Add condensed milk to taste.
Notes: If you can't find coconut milk, substitute regular milk, milk substitute or even liquid coffee creamers. If you like oatmeal thin then that is how you will like your porridge. If so add less cornmeal, and if you like it thick add more.
