Ginger Pancakes with Pear Sauce

Crystallized ginger gives these light and fluffy pancakes exotic flavor. Top with honey and a sweet pear puree.
 

Ingredients

  • Pear sauce:
  • 3 Bosc pears
  • ? cup water
  • juice of ? lemon
  • ? tsp nutmeg
  • Pancakes:
  • 2? cup flour
  • 2 tbs sugar
  • 1 tbs baking powder
  • 1 tsp salt
  • 1 tsp ground ginger
  • pinch of ground cloves
  • 2 beaten eggs
  • 2 cup milk
  • ? cup cooking oil
  • 1 tsp vanilla
  • ? cup crystallized ginger

Method

Peel, quarter, seed and dice pears. Place in a small sauce pan along with water and lemon juice. Bring just to a boil over high heat. Turn to low heat, stir in nutmeg and simmer covered, while preparing pancakes, about 15 minutes. Preheat oven to 200 degrees. Lightly grease griddle and heat over medium. In a mixing bowl, stir together flour, sugar, baking powder, salt, ground ginger, and ground cloves. Add eggs, milk, oil, and vanilla and stir until just combined. Fold in crystallized ginger. Pour ? cup of batter onto griddle to form each pancake. Cook until golden brown on bottom and bubbly on top. Flip each pancake over and cook until golden on other side. Repeat with remaining batter until all batter is cooked. Place finished pancakes on a platter in a warm oven until ready to serve. Remove pears from heat and puree. Serve hot with the pancakes along with a drizzle of honey.
