Golden Waffles with Bam Topping

Your kids won't even know they're eating healthy with these delicious waffles topped with Blueberry-Apple-Maple topping.
 

Ingredients

  • Waffles:
  • 1 cup unbleached all purpose flour
  • 1/2 cup white whole wheat flour
  • 1/4 cup ground flaxseed
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3 eggs
  • 1 cup olive oil or melted butter
  • 1 1/2 cup milk
  • 1 cup canned pumpkin, plain puree
  • Blueberry-Apple-Maple Topping:
  • 1 tbsp butter
  • 2 c. frozen blueberries
  • 2 apples, peeled, cored, and cut into 8 slices
  • 2 tbsp maple syrup
  • 1 tbsp cornstarch dissolved in 1/4 cup water

Method

Whisk together in large bowl flours, flaxseed, baking powder and salt. In a medium bowl, beat well: eggs, oil or butter, milk and pumpkin. Make a well in the center of the dry ingredients and add the egg mixture. Stir just until combined, but small lumps remain. Preheat waffle iron and cook waffles according to manufacturer's instructions. Keep waffles warm by putting a cooling rack on top of a cookie sheet in a warm (200 or less) oven. If you are making ahead to freeze, make sure they cool completely before placing in freezer. Serve with Blueberry Apple Maple Topping, or a topping of your choice. For BAM (Blueberry-Apple-Maple) Topping: Melt butter, and then add blueberries, apples, and maple syrup. Bring to a simmer, then add cornstarch stirring well. Simmer for 1 minute or until thickened, then keep warm. *Because the amount of water the fruit releases can vary, the amounts of water and cornstarch are approximate and you should feel free to adjust to the consistency you prefer.

 

Notes: These are my 4 year olds main source of vegetables and he just has no idea how good they are for him. Chock full of vitamin A, low sugar, full of fiber and omega-3s from the flaxseed, and they taste great! I make a triple batch every other week or so and have them on hand for quick weekday breakfasts ...or a no-objection dinner.
