Guilt-Free Apple, Cinnamon and Swiss Omelet

This low-fat breakfast or dessert omelet for one combines Egg Beaters, apples, cheese, Diet Cherry Vanilla Dr. Pepper, Splenda and cinnamon.
 

Ingredients

  • 1/2 cup Egg Beaters
  • 1 medium apple
  • 1 wedge (Laughing Cow brand) Light Creamy Swiss Cheese, sliced
  • 1/4 cup Diet Cherry Vanilla Dr. Pepper cola
  • 1/2 cup Splenda
  • 3 Tbsp cinnamon

Method

Peel and slice apple, place in microwave safe bowl. Combine Dr. Pepper, 1 Tbsp of the cinnamon and 2 Tbsp of the Splenda; pour over apple slices. Cover loosely and microwave for 2 to 3 minutes, until tender. Set aside. Mix Egg Beaters with another 1 Tbsp cinnamon and 2 Tbsp Splenda. Pour egg product into medium skillet; place over low heat. When bubbles start to form on top of omelet, top one side of omelet with apple slices and sliced cheese wedge. Fold over omelet, sprinkle both sides with remaining cinnamon and sugar, cook until cheese is melted and outside turns slightly golden-brown. Add a Tbsp of fat-free whipped cream, if desired.

 

Notes: Very low fat, high protein, 175 calories.
