Healthy Hearty Meatloaf

This meatloaf uses ground turkey, egg white, and rolled oats for a healthy version. It also has tomato, onion and garlic, and may be garnished with bell pepper rings.
 

Ingredients

  • 1 1/2 lbs. lean ground raw turkey
  • 1 egg white
  • 1/2 cup quick-cooking or instant rolled oats (not the regular, long-cooking oatmeal)
  • 1 small tomato, diced (I like a plum tomato)
  • 1 teaspoon minced garlic
  • 1 medium onion, diced finely
  • 1/2 cup ketchup
  • 1/4 cup water
  • Bottled hot sauce, to taste
  • Salt, as desired
  • An additional 1/2 cup ketchup
  • 1 bell pepper, sliced into rings(optional)

Method

Mix ground turkey, egg white, oats, tomato, minced garlic and onion, 1/2 cup ketchup, the water, and hot sauce until well combined. (Add salt as desired.) Place in loaf pan, or use a large baking pan and shape into loaf. Bake @ 350 for 35 minutes. Top with additional ketchup and sliced bell pepper rings; bake for an additional 10-15 minutes or until meat is done.

 

Notes: May use dried garlic and any type of small tomato; serve with mashed potatoes, vegetable, and salad. Great for next-day leftovers, cold or warmed.
