Heart Healthy Chocolate Silk Pie

This low fat, no cholesterol recipe, disguises tofu inside a rich and creamy chocolate pie--a heart healthy dessert everyone will love.
 

Ingredients

  • 9 graham crackers
  • 1/4 cup canola oil
  • 1 12 oz package semisweet chocolate chips
  • 2 12 oz boxes silken tofu, firm
  • 1 tsp vanilla extract
  • 1/2 cup superfine sugar
  • 1 cup fresh raspberries

Method

In a food processor, grind graham crackers into crumbs. Slowly pour canola oil into food processor while running. Transfer graham crumb mixture into a pie pan and spread evenly. Rinse off food processor bowl and blade. Melt chocolate chips in a double broiler. Meanwhile, mix tofu, vanilla and sugar in a food processor until creamy and smooth. Occasionally scrape down sides, to process any stray tofu curds. Add melted chocolate and mix until completely chocolate brown, without white streaks. Pour chocolate mixture into prepared pie crust. Chill at least one hour, longer if more convenient. Just before serving, top with fresh raspberries.

 

Notes: Valentine's day is a chance to celebrate the love in our hearts. Don't crowd out that love with high fat and cholesterol.
