Italian Comfort Soup

A colorful mix of veggies, sausage, pepperoni, and pasta combine for a savory healthy main dish soup.
Ingredients
- 2 tbsp olive oil
- 1 lb sweet Italian turkey sausage
- 1 medium onion, coarsely chopped
- 1/2 stick pepperoni, cut into 1/4 inch chunks
- 8 cloves garlic, chopped fine
- 14-15 large fresh basil leaves, chopped
- 1 28 ounce can crushed tomatoes
- 1 15 ounce can garbanzo beans, drained
- 1 14 ounce can baby corn, drained and cut into bite size pieces
- 2 cups hot water
- 6 cups chicken broth
- 1 cup 1/2 inch pieces carrot
- 1 1/4 cup diagonally cut green beans
- 2 cups 1/2 inch fresh zucchini chunks
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 1 cup #50 farfalline pasta, small bows
- Parmesan cheese

Method
Cook pasta in boiling water 6 minutes and drain. In a large pot, cook sausage and onion in olive oil, over medium low heat, until cooked through. Add pepperoni, garlic and basil. Add crushed tomatoes, water and chicken broth. Stir in garbanzo beans, baby corn pieces and carrots. Bring to a boil on medium high heat, reduce heat to low, and simmer for 45 minutes. Add green beans, zucchini, salt and pepper. Cook another 15 minsutes. Add pasta and simmer another 10 minutes.
Notes: Serve with freshly baked focaccia. Shave fresh Parmesan cheese on top of each bowl.
