Lemon Orzo

Orzo, also called rosamarina, is a small dried pasta, shaped like long grains of rice.
 

Ingredients

  • 1 cup dried orzo (rosamarina)
  • 2 cups chicken broth
  • 2 strips lemon peel
  • 1/4 cup olive oil
  • 4 green onions, thinly sliced
  • 1 medium red sweet pepper, diced
  • 1 tsp. crushed red pepper flakes
  • 1/4 cup chopped fresh parsley
  • 3 tbsp. lemon juice
  • 2 tbsp. lemon zest
  • 2 cloves garlic, minced
  • Salt and pepper
  • Freshly grated Parmesan cheese

Method

Cook orzo in chicken broth with lemon peel strips; drain and set aside. In a large skillet preheat 2 tablespoons of the olive oil over medium-high heat. Add green onions, red sweet pepper, red pepper flakes; cook and stir until tender. Stir in cooked orzo, remaining 2 tablespoons olive oil, parsley, lemon juice, lemon zest, and salt and pepper to taste. Transfer to a serving dish; sprinkle with Parmesan cheese.

 

Notes: Other additions include: sundried tomato, fresh basil, shrimp, or tomato.
