Low-Fat Mango Chutney and Cream Cheese Salad

This creamy salad is made with green pepper, green onion & peanuts stirred into cream cheese & sour cream, topped with mango chutney & coconut.
 

Ingredients

  • 1 8-ounce package fat-free cream
  • cheese
  • 1/2 cup fat-free sour cream
  • 1 tablespoon curry powder
  • 1/4 cup green bell pepper, finely
  • chopped
  • 1/4 cup green onion, finely chopped
  • 1/4 cup peanuts, chopped
  • 6 large romaine lettuce leaves
  • 1 cup mango chutney
  • 1/4 cup flaked coconut

Method

Mix together cream cheese, sour cream, curry powder, bell pepper, onion and peanuts. Place one lettuce leaf on each of six salad plates. Divide cream cheese mixture evenly among lettuce leaves. Top with chutney, then sprinkle with coconut. Chill before serving.

 

Notes: This brunch recipe will be eagerly devoured by dieters and nondieters alike. Serve with low-fat crackers.
