Low-Fat Spinach & Chicken Saute

Sauteed chicken and spinach in a tomato mixture is served on a bed of noodles, with a dollop of low-fat cottage cheese on top.
Ingredients
- 1 1/2 to 2 lbs of skinless, boneless chicken breasts (cut into cubes)
- 2 cups torn fresh spinach
- 1 small onion (diced)
- 1 tsp EACH garlic salt and black pepper (or to taste)
- 1 tsp dried Italian seasoning
- 2 cans (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 package (16 oz.) extra-wide wavy egg noodles
- Low-fat cottage cheese
- Pam cooking spray

Method
Spray Pam cooking onto a large skillet, and saute chicken cubes on medium heat until halfway cooked, about 5-8 minutes. Add onions and cook about 5 minutes. Then add spinach, garlic salt, pepper and Italian seasoning. Cook 1 minute; stir in tomatoes and tomato sauce. Simmer on low heat, keeping skillet partially covered. Meanwhile cook noodles per package instructions until al dente. Drain noodles and portion out onto six serving plates. Add a scoop of chicken-spinach mixture on top of noodles, and then add a dollop of low-fat cottage cheese on top. Let each person stir the mixture together on their plate.
