Low-fat Stuffed Bell Peppers

Bell peppers are halved and stuffed with a mixture of ground turkey, parsley, onion, shrimp, bread crumbs and turkey sausage.
 

Ingredients

  • 5 bell peppers
  • 1 pound ground raw turkey
  • 1 onion
  • 1 cup chopped fresh parsley
  • 1 green onion, sliced
  • 1 lb. shrimp, peeled, deveined and chopped
  • 1 1b. smoked turkey sausage, diced
  • Salt or seasoned salt and pepper, to taste
  • Seasoned fine dry bread crumbs

Method

Cut the 5 five bell peppers in half lengthwise. Boil them about 5 minutes, until crisp-tender. Drain. In nonstick skillet combine the ground turkey, parsley, onion, green onion, shrimp, diced sausage, and seasoning. Stir over medium heat. When everything is a nice brown in color, then stir a little bit of the bread crumbs into the mixture. Stuff the mixture into the bell peppers. Place in baking dish and bake at 350 until heated through.

 

Notes: I have lost 27 1bs eating my bell peppers and a low fat diet.
