Marinated Sole With Fresh Tomato-Cilantro Sauce

Sole fillets marinate in a mixture of lime juice and either vermouth or lemon juice, are just the start to this tasty and healthy fish recipe. The sole is cooked in a fresh tomato and cilantro mixture, and served with cooked rice as a main dish.
 

Ingredients

  • 4 Sole Fillets
  • 1/4 Cup lime juice
  • 2 Tablespoons dry vermouth or lemon juice
  • 1 Teaspoon olive oil
  • 2 Cloves garlic, minced
  • 1 ripe tomato, chopped
  • 1 Tablespoon minced fresh cilantro Dash freshly ground black pepper
  • Hot cooked rice

Method

Marinate sole fillets in lime juice and vermouth or lemon juice for 15-20 minutes. Meanwhile, place oil in skillet and add minced garlic. Stir garlic over medium heat for about 1 minute, then add chopped tomato, cilantro, and black pepper. Bring just to boil over medium heat. Then turn temp to low. Cover and cook for 10 minutes. Remove cover and mash tomato pieces with back of spoon. Drain fillets, reserving 2 tablespoons of marinade. Stir reserved marinade into tomato mixture and arrange fillets over top of sauce. Cover pan. Cook over low heat about 10 minutes, until fish flakes and is opaque throughout. Carefully remove fillets to serving plate. Spoon tomato-cilantro sauce over fish and serve with cooked rice.
