Melt in Your Mouth Pancakes

Buttermilk gives these soft and tender pancakes their delicate flavor and texture.
Ingredients
- 2 cups buttermilk
- 3 eggs
- 1/4 cup vegetable oil
- 2 to 2 1/2 cups flour
- 2 heaping tbsp baking soda
- 2 tsp salt
- 1/2 to 1 cup boiling water

Mix together buttermilk, eggs, oil and then add flour. In a glass measuring cup, heat water to a boil then add baking soda and salt. The amount of water depends on how thin or thick you want the pancakes. Stir into buttermilk mixture, (this should release any clumps.)
