Oatmeal Pancakes

These healthy pancakes are made with oats, soy flour, and mashed sweet potatoes for a sweet, moist flavor.
 

Ingredients

  • 1/2 cup oats
  • 1/4 cup soy flour
  • 1 tsp vanilla
  • 1/4 cup mashed sweet potatoes
  • 1/2 cinnamon
  • 3 egg whites
  • 4 oz vanilla (no sugar added)
  • 1 tsp brown sugar

Method

Add all dry ingredients together. Mix egg whites with a fork. Add all wet ingredients to dry ingredients and mix. Spray skillet with Pam and warm on medium heat. Drop pancakes into pan. Cook each side for two minutes. Makes about 3 medium pancakes.
