Orange Bananas Foster

Bananas, cut into quarters, are heated in a sauce of orange juice concentrate, cinnamon & rum. It may be flamed, if desired, and served on yogurt.
 

Ingredients

  • 4 ripe but firm bananas
  • 1/2 cup frozen orange juice concentrate, thawed
  • 1/2 cup water
  • 1 teaspoon cinnamon
  • 4 tablespoons (1/4 cup) rum
  • Fat-free and/or sugar-free vanilla yogurt

Method

Slice the bananas in half lengthwise, then again in half crosswise. Combine the orange juice concentrate, water and cinnamon in saute pan or skillet. Bring to slow boil. Cook uncovered to reduce mixture just a bit. Add the banana quarters and cook gently just till hot. Add rum at the last minute. (Flame it, if you want, off the heat.) Serve 4 pieces of banana per person immediately over vanilla yogurt.

 

Notes: This serves as a healthy alternative to sugary-sweet bananas foster. You can also make this as a sauce, without the bananas.
