Pina Colada Granola with Yogurt

This homemade granola uses rolled oats, wheat germ, coconut, spices, honey and oil, plus pineapple juice, dried pineapple and rum extract for a pina colada idea. The baked granola is served with pina colada yogurt for a refreshing breakfast-or-anytime treat.
 

Ingredients

  • 4 cups old-fashioned rolled oats
  • 1/2 cup wheat germ
  • 1/3 cup macadamia nuts, chopped
  • 1 cup shredded sweetened coconut
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 tablespoon extra-virgin olive oil
  • 3/4 cup honey
  • 1/3 cup pineapple juice
  • 1/2 teaspoon rum extract
  • 1/2 cup chopped dried pineapple
  • 2 6-ounce cups pina colada yogurt

Method

Preheat oven to 350F. Spray a 15"x10" baking pan with cooking spray. In a large bowl, combine oats, wheat germ, macadamia nuts, coconut, cinnamon, ginger and salt; mix well. In a small saucepan, bring oil, honey, pineapple juice and rum extract just to a boil; remove from heat and pour over oat mixture. Combine well, then spread oat mixture onto the prepared baking pan. Bake granola for 10 minutes; stir well. Bake for another 10 minutes; stir well. Bake for 10 more minutes, then remove from oven. Stir in dried pineapple, and let cool completely. To serve, pour 2/3 cup granola into a serving bowl, and top with 3 ounces of yogurt.

 

Notes: This is a delicious granola, a variation of the standard oats-'n'-raisins versions. It's easy to make and nutritious. It's a great start to the day, and also a great snack!
