Power Packed Breakfast Pilaf

Serve this hot cereal, made with couscous, fruit bits, and almonds, with a little bit of half-and-half.
 

Ingredients

  • 2 cups orange juice
  • 2 tbsp. honey
  • 1/2 tsp. ground ginger
  • 1 1/2 cups couscous
  • 1/2 cup tropical dried fruit bits
  • 1/4 cup sliced almonds
  • 2 tbsp. crystallized ginger bits
  • 2 tbsp. butter
  • 1 tbsp. lemon juice
  • 1/2 tsp. orange peel

Method

In a 1 1/2-quart saucepan bring the orange juice, honey, and ground ginger to boiling. Stir in couscous, fruit bits, almonds, ginger bits, butter, lemon juice, and orange peel. Cover and remove saucepan from heat. Let stand 10 minutes. Fluff with a fork.

 

Notes: quick, easy, nutritious and something a little different for breakfast; kids will like it, too.
