Pumpernickel Cheesecake Toasts

This breakfast/brunch idea is similar to French toast, with a sweet and spicy cream cheese-white chocolate chip-blackberry mixture sandwiched inside.
Ingredients
- 8 slices pumpernickel bread
- 2/3 cup milk
- 3 eggs
- 1 tbsp melted butter
- 4 oz fat-free cream cheese
- 1/4 cup powdered sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 cup blackberries
- 1/2 cup white chocolate chips
- Fat-free or French vanilla Cool Whip (optional)

Preheat a nonstick griddle. In a bowl, beat together eggs, milk and butter. In a food processor, pulse cream cheese, berries, sugar, cinnamon, and vanilla until well blended. Spread 1/4 of mixture on 4 slices of bread. Sprinkle 2 tbsp white chocolate chips on each slice with cream cheese. Press remaining slices of bread onto ones with filling. Dip each into egg mixture, flipping to coat both sides. Place onto griddle, and cook like a grilled cheese, flipping after a minute or two. Cook until chocolate chips are melted and the outside is golden brown. Remove from griddle and slice in half diagonally. Serve with a dollop of Cool Whip, if desired.
