Sesame-orange Chicken & Rice Salad

This rice salad is not only delicious but beautiful to display on a table. It is made easy using rotisserie chicken, packaged cole slaw mix, and prepared Asian dressing.

  • Servings: 4-6

Ingredients:

2 cups Cooked Brown Rice, cooled
1 Tbsp Sesame Oil
1 Tbsp Soy Sauce
1 tsp Lemon Juice
11 oz. can Mandarin Orange Segments, drained and patted dry
2 Tbsp Sesame Seeds
1½ cups Coleslaw Mix
1½ cups Frozen Asian-style Mixed Vegetables, thawed and patted dry
2 cups Cooked, shredded chicken (such as rotisserie
⅓ – ½ cup Lite Asian-style Salad Dressing
⅓ cup Crispy Chow Mein Noodles

Directions:

In a medium bowl, toss rice with sesame oil, soy sauce, lemon juice, and oranges; arrange in a ring on a platter. Sprinkle the sesame seeds on top of the rice. Wipe out the bowl and place coleslaw mix, mixed vegetables, chicken, and dressing to taste; mix well. Place the mixture in the center of the rice ring. Sprinkle with chow mein noodles and serve immediately.

Helpful Tips:

I created this salad in honor of Chinese New Year--it combines flavors from traditional Chinese takeout favorites, but in a much more healthful way. I love both sesame chicken and orange chicken, but I don't like the extra calories in the deep-fried versions. So, instead, I put together a salad that showcases the bold flavors of both dishes, but is also packed with lean protein, whole grains, vitamins, and very few calories. It is light, nutritious, and very satisfying!
