Spicy Potatoes

Picante sauce and some ground cumin spice-up this hash brown-like vegetable side dish.
 

Ingredients

  • 1/4 cup olive oil
  • 3 medium potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 2 medium tomatoes, sliced
  • 1/2 of a green sweet pepper, cut up
  • Salt
  • Black pepper
  • 1/4 cup picante sauce
  • 1/4 cup water
  • Shredded cheese

Method

Preheat oil in a large skillet. Add potatoes; cook and stir until tender. Add onion, garlic, cumin, tomatoes, and sweet pepper. Cook and stir for 3 minutes. Season to taste with salt and pepper. Stir in picante sauce and water. Simmer over low heat until desired consistency. Sprinkle with cheese. Cover and cook for 5 minutes.

 

Notes: Serve with flour tortillas or heated corn tortillas.
