Spicy-sweet & Moist Low-fat Meatloaf

Lean ground beef and sausage combine with vegetables, dairy products and seasonings to make TWO low-fat meatloaves, topped with a tomato sauce glaze.

Ingredients:

Topping:
½ cup Tomato Sauce
3 Tbsp Dark Brown Sugar
½ tsp Cayenne Pepper, or to taste
1 tsp Coarse Black Pepper, or to taste
Meatloaf:
1¾ lbs Lean Ground Beef Chuck
1× 12-oz Roll Low-fat Sausage (such As Turkey)
1 cup Rolled Oats
1 cup Crushed Saltine Crackers
3 Whole Eggs
½ cup Nonfat Milk
½ cup Low-fat Cottage Cheese
1 cup Nonfat Sour Cream
2 Tbsp Worcestershire Sauce
3 Tbsp a-1 Steak Sauce
2 cups Chopped Fresh Mushrooms
1 Medium Sweet Onion, diced
½ Large Red Bell Pepper, diced
1 Medium Ripe Tomato, diced
¼ cup Chopped Fresh Italian Parsley
½ cup Low-fat Grated Parmesan Cheese
2 tsp Cayenne Pepper, or to taste
1½ tsp Garlic Powder
1½ tsp Sweet Dried Basil
1½ tsp Ground Sage
1½ tsp Sea Salt, or to taste
1½ tsp Pepper, or to taste

Directions:

Combine topping ingredients in a small bowl, mix well and set aside. Combine all meatloaf ingredients, in order as listed, in a large bowl and mix thoroughly. Divide meat mixture in half. Using 2 oven-safe large glass baking dishes, shape one portion of the mixture into a loaf in each glass dish. Cover with foil bake at 425 degrees, until internal temperature reaches 165 degrees, about 55 minutes. Remove loaves from oven and uncover. Brush topping mixture onto each meatloaf and bake loaves, uncovered, an additional 15 minutes. Let loaves cool several minutes before slicing and serving.

Helpful Tips:

Makes 2 medium-sized loaves, one to eat now and one to freeze. Due to this recipe being lowfat, you may want to coat glass baking dishes with a nonstick spray to make clean-up easier.
