| Meatloaf: | |
| 1¾ lbs | Lean Ground Beef Chuck |
| 1× 12-oz | Roll Low-fat Sausage (such As Turkey) |
| 1 cup | Rolled Oats |
| 1 cup | Crushed Saltine Crackers |
| 3 | Whole Eggs |
| ½ cup | Nonfat Milk |
| ½ cup | Low-fat Cottage Cheese |
| 1 cup | Nonfat Sour Cream |
| 2 Tbsp | Worcestershire Sauce |
| 3 Tbsp | a-1 Steak Sauce |
| 2 cups | Chopped Fresh Mushrooms |
| 1 | Medium Sweet Onion, diced |
| ½ | Large Red Bell Pepper, diced |
| 1 | Medium Ripe Tomato, diced |
| ¼ cup | Chopped Fresh Italian Parsley |
| ½ cup | Low-fat Grated Parmesan Cheese |
| 2 tsp | Cayenne Pepper, or to taste |
| 1½ tsp | Garlic Powder |
| 1½ tsp | Sweet Dried Basil |
| 1½ tsp | Ground Sage |
| 1½ tsp | Sea Salt, or to taste |

Directions:
Combine topping ingredients in a small bowl, mix well and set aside. Combine all meatloaf ingredients, in order as listed, in a large bowl and mix thoroughly. Divide meat mixture in half. Using 2 oven-safe large glass baking dishes, shape one portion of the mixture into a loaf in each glass dish. Cover with foil bake at 425 degrees, until internal temperature reaches 165 degrees, about 55 minutes. Remove loaves from oven and uncover. Brush topping mixture onto each meatloaf and bake loaves, uncovered, an additional 15 minutes. Let loaves cool several minutes before slicing and serving.
Helpful Tips:
Makes 2 medium-sized loaves, one to eat now and one to freeze. Due to this recipe being lowfat, you may want to coat glass baking dishes with a nonstick spray to make clean-up easier.
