Spinach & Chicken Skillet

A low fat, tasty main dish made with chicken and spinach.
 

Ingredients

  • 3 boneless skinless chicken breast
  • 1/2 C fat-free (skim) milk
  • 1/4 C fat-free chicken broth
  • 1/4 C chopped onion
  • 10 oz. bag fresh spinach, chopped
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp ground nutmeg

Method

Remove fat from chicken. Spray 12" nonstick skillet with cooking spray; heat over med. heat. Cook chicken in skillet 2 minutes on each side. Reduce heat to med-low. Stir in mild, broth and onion. Cook 5 minutes, turning chicken occasionally, until onion is tender. Stir in spinach. Cook 3-4, stirring occasionally, until spinach is completely wilted and chicken is cooked through. Remove chicken from skillet, keep warm. Increase heat to medium. Cook spinach mixture about 3 minutes or until liquid is almost evaporated. Stir in salt, pepper, nutmeg. Serve chicken on spinach.
