Spring Roll Salad

This main dish (or side dish) salad combines endive, cucumber, bell pepper, rice noodles, shrimp and imitation crab, with Asian chili sauce.
 

Ingredients

  • 1 head of endive lettuce, torn
  • 3 green onions, sliced
  • 1 cucumber, seeded
  • 1/2 bunch of cilantro, chopped
  • 1 red bell pepper, chopped
  • 1 pkg rice noodles (break noodles in half prior to cooking)(Rinse thoroughly and drain.)
  • 1 pkg salad shrimp (thaw and rinse)
  • 1 pkg imitation crab meat pieces
  • 1/2 bottle of Asian Chili sauce for spring rolls (Pantai is one brand)

Method

Combine ingredients and toss just prior to serving.
