Strawberry French Toast Cup

Slices of brioche or egg bread are dipped in a batter of eggs and a little orange juice, pressed into muffin cups, and baked. The cups are filled with a mixture of sweetened sliced strawberries and maple syrup.
 

Ingredients

  • 2 cups fresh sliced strawberries
  • 2 tbls granulated sugar
  • 8 slices of brioche (egg bread can be used as well)
  • 4 eggs
  • 1 tsp vanilla
  • 1 tbls orange juice
  • 1/2 cup maple syrup

Method

Preheat your oven to 350 degrees and generously grease a muffin tin. Toss strawberries and sugar in a bowl, allow the mixture to sit in order to draw the natural juices out of the berries. In the meantime beat the 4 eggs together with the vanilla and OJ, then dip your bread in the eggs. Press your bread into the muffin tin creating "cups", bake this for 15 minutes or until dry. Place your French toast cups on a plate, mix your berries with the maple syrup then fill the cups.

 

Notes: The bread will most likely not fit perfectly into the muffin mold, that's okay, the slight overflow creates a very pretty brunch treat.
