Summertime Grilled Swordfish Steaks

Marinated swordfish is grilled for a light and healthy entree. Serve with a fresh garden salad or grilled vegetables for a perfect summertime meal.
 

Ingredients

  • 4 8 oz swordfish steaks, 1 inch thick
  • 2 tbsp soy sauce
  • 1/4 cup extra virgin olive oil
  • 1/4 cup orange or pinapple juice
  • 2 tbsp dry red wine
  • 1/2 tsp ground ginger
  • 1/2 tsp rosemary
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp minced garlic or 1 clove, finely chopped
  • Snipped fresh parsley, optional

Method

In a small bowl, whisk together all ingredients except swordfish. Place steaks in a large resealable bag and pour marinade over steaks. Refrigerate 4-6 hours, turning periodically. Remove fish from bag, retaining marinade for basting. Preheat grill to medium heat, grill 6-8 minutes per side, basting each side with leftover marinade. Garnish with parsley, optional. Discard left over marinade.
