Sunrise Frittata

This baked frittata combines eggs, milk, shredded Swiss cheese, diced tomatoes, asparagus tips and lemon thyme.
 

Ingredients

  • 8 eggs
  • 1/2 cup milk
  • Pepper to taste
  • 1/2 cup shredded Swiss cheese
  • 2 Roma tomatoes, seeded & diced
  • 1/2 cup asparagus tips
  • Leaves from 3 to 4 sprigs fresh lemon thyme

Method

Preheat oven to 350 F. Whisk eggs, milk and pepper until blended. Stir in cheese, tomatoes, asparagus tips, and lemon thyme leaves. Pour mixture into a greased, 9-inch pie pan. Bake for 30 minutes or until eggs are set. Slice into wedges to serve.

 

Notes: This recipe screams Spring! I love stepping out my backdoor on a sunny morning and plucking the thyme and asparagus right from my garden.
