Thai Turkey Skillet

This ground turkey main dish gets its Thai flavor from the fish sauce, lemon juice and soy sauce. For even more flavor add snipped fresh cilantro.
Ingredients
- 1 pound Lean Ground Turkey
- 1 tablespoon granulated sugar
- 1/4 cup fish sauce
- 1/4 lemon juice (bottled kind fine)
- 1/4 cup soy sauce
- 2 teaspoons prepared minced ginger
- 2 teaspoons crushed red pepper
- 1 small red onion, finely chopped
- 2 cups purchased julienned carrots
- 3/4 cup peanuts, chopped
- 3 cups prepared Brown Rice (from 1 cup dry rice following package instructions)
- Garnish - chopped green onion and peanuts

Method
In large skillet, cook ground turkey over medium heat until browned. Drain off excess grease. Sprinkle sugar over ground turkey and cook several more minutes. In small bowl, combine fish sauce, lemon juice, soy sauce, ginger paste and red pepper. Pour over meat. To skillet, add chopped red onion, carrots and chopped peanuts. Continue cooking several more minutes over medium heat until vegetables are warmed through but not over-cooked. Serve over prepared hot rice. Garnish with green onion and peanuts.
