|1 lb||Lean Ground Turkey|
|1 Tbsp||Granulated Sugar|
|¼ cup||Fish Sauce|
|¼||Lemon Juice, bottled kind fine|
|¼ cup||Soy Sauce|
|2 tsp||Prepared Minced Ginger|
|2 tsp||Crushed Red Pepper|
|1||Small Red Onion, finely chopped|
|2 cups||Purchased Julienned Carrots|
|¾ cup||Peanuts, chopped|
|3 cups||Prepared Brown Rice, from 1 cup dry rice following package instructions|
|Garnish - Chopped Green Onion & Peanuts|
In large skillet, cook ground turkey over medium heat until browned. Drain off excess grease. Sprinkle sugar over ground turkey and cook several more minutes.
In small bowl, combine fish sauce, lemon juice, soy sauce, ginger paste and red pepper. Pour over meat.
To skillet, add chopped red onion, carrots and chopped peanuts. Continue cooking several more minutes over medium heat until vegetables are warmed through but not over-cooked.
Serve over prepared hot rice. Garnish with green onion and peanuts.
