Turkey Chili Mole

With hints of cumin, cinnamon and chocolate, this turkey chili satisfies both sweet and savory cravings at just under 500 calories per serving.
 

Ingredients

  • 1-1.25 lbs extra lean ground turkey
  • 1 tbsp olive oil
  • 1 medium onion, diced fine
  • 1 green bell pepper, diced fine
  • 1 jalapeno pepper, diced with seeds
  • 1 14.5 oz can low sodium chicken broth
  • 1 14.5 oz can whole tomatoes, pureed
  • 1 8 oz can tomato sauce
  • 2 cloves garlic
  • 1/4 cup chili powder
  • 1 tbsp cumin
  • 1 bay leaf
  • 1 tsp oregano
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 14.5 oz can pinto beans, drained
  • 2 oz dark chocolate (70% cacao), chopped
  • Garnish:
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup raw onion, chopped

Method

Heat olive oil over medium heat. Cook onion until soft, about 5-7 minutes. Add chopped garlic and cook for a minute longer. Place in crock-pot. In same pan, brown ground turkey over medium heat until cooked. Add to crock pot along with green pepper, jalapeno pepper, pureed tomatoes, tomato sauce, chicken broth, chili powder, all spices and chocolate. Set crock pot to high until mixture starts to bubble. Mix well. Add pinto beans and simmer for 6 hours. Season to taste with additional salt and pepper. Garnish with mixture of fresh cilantro and onion.
