Whole Wheat Black Bean Wraps

Just roll tortillas with a black bean salsa for a great and healthy snack.
Ingredients
- 1 teaspoon olive oil
- 1 white onion, thinly sliced
- 1 red bell pepper, sliced
- 1 15 oz can Black Beans, rinsed and drained
- 1 4.5 oz can chopped green chilies
- 1/2 cup thick & chunky picante sauce, medium spice
- 4 whole wheat tortillas
- 1 ripe avocado, sliced

Method
In a non-stick pan with a lid, heat olive oil over medium heat. Stir in onions. Cover and cook for 5 minutes. (Some of the onions will be browned by this time.) Stir in peppers. Cover and cook for another 5 minutes. Stir in black beans, chilies and picante sauce. Cook uncovered for another 5 minutes. In a toaster oven, lightly toast the tortillas. Scoop about a 1/2 cup of bean and onion mixture into each tortilla, roll up and serve garnished with avocado.
Notes: Beans are a great high-protein, low fat food with no cholesterol. Combine beans with whole wheat tortillas, and you're working the food pyramid!
